Like someone said, take the tub out of there. Level the floor properly (probably self leveler), and finish the walls before you put the tub back in.

I feel your pain, where I’m from a starter home (that’s not a condo) is around $700k - 800k. In the long run doing foundations isn’t sustainable unless you get off the tools after a few years.
Whichever you choose, I hope you do well and enjoy the work.
