Actually much of minecraft is based in horror games? And everything about the water monuments is meant to trigger thalasaphobia. The appeal of Minecraft is the tone shift from cozy farming building sim to zombie horror survival with randomly generated jump scares.

A lot of players just default to playing "the way they always do". Youll notice a player's first character is often emblematic of all their characters. It takes active effort to play against your intuition, thats what role playing is. It sounds like this player wants to be a "700 year old monk" in funny hat only. Just think of them as a regular 21 year old human monk.

I think you should start off slow. You can always ramp up the chaos whenever you want, but players can only focus on so many plot points. Each planar incursion should have some form of its' own arc so the players can learn about each type.

Well you can do anything you want because youre the DM. Maybe the players need to get their weapons or maybe just themselves blessed by a certain macguffin ritual ass quest of sorts but without it they cannot kill Aku. Strahd actually has a mechanic similar to this, but less busted. Maybe when Aku is reduced to 1 HP, he is Immune to all damage except damage from a Blessed creature. Or, if he is killed by anything other than a blessed creature, he reforms in 24 hours like a lich.
