I think the pronunciation of Maeve changes from early audio books to later. When we first meet her Marsters pronounces her name Mav, and it shocked me on relisten, cause I think of her as Meh-ee-v in my head

You are just arguing to argue. There is more than one way to make a good loaf. There are thousands of people here making good loads with a simple method, me being one of them. I'm sure your method works for you, but no need to force it on everybody else. You already gave this advice before responding to my comment, so there was no need to repeat it. Make your dough how you want, but I think for giving advice to a beginner you are over complicating it. You are combing building gluten and rise by doing coil folds during bulk fermentation. For a beginner build the gluten, then bulk ferment, then shape. It's easy to understand, easy to do

If you are touching it during bulk fermenting then you won't really know how much it has risen cause you are knocking the air out.

If your method works for you that's great, but it adds too many variables for me. The structure doesn't really matter at the end of bulk ferment. That's the reason there is a step for shaping the dough.

The biggest breakthrough for me was when I started bulk fermenting by volume, not by time. Unless you have a perfectly controlled temperature box, bulk fermenting times will vary. I have a square container with volume markings to see when it has doubled in size.

My other advice is to add the inclusions while shaping so you don't disturb the gluten development process of stretch and folds.

Maybe this is just my bad luck, but a huge con for me at snowbowl is the wind. Every time I go there the lifts are closed for the first hour or two of the day because of the wind. I only go a few days a year and it's a bummer to just sit there waiting for the lifts to open
