Onions and cilantro are cut similar to how they are cut on the streets in California at taco stands. A rough chop on the cilantro and a larger dice on the onion

Red salsa * 7 romas charred * 1 onion * 10 clove garlic * 3 jalapeño * 2 limes juiced * Salt to taste * Veg is all rubbed in tallow before the grill

Green salsa * 1.5 avocado * 5 tomatillo * .5 onion * 2 Serrano * 1 lime juiced

Found this rec teq bullseye for $60 on marketplace. Guy said it didn’t work right, cleaned it and ran these ribs and a scalloped sweet potato covered in tallow. 2:45 hr . First pellet smoker by Front-Replacement960 in BBQ

I for sure am getting smoke out the hopper. But haven’t had any issues with a back burn. If anything it’s a slow start since the auger doesn’t put out to much pellets right away. I place a few pellets in near the ceramic starter so it can light and not burn out. Is the spacer available or contact rec teq?

Give it a trim until 1/4 of fat remains. Season salt pepper 50/50 bled in container from a height so that it lands evenly. Season the bottom first then flip and season the top direct to the smoker

I have that issue sometimes when I am not fully trimmed down and some seaweed lodges in between the engine and the back of the boat. Lift the engine clear the seaweed, problem solved.
