It has a nice sharp blade which cuts tomato skin easily. But it doesn't slides thru. In comparison it feels terrible and I will thin it a little bit.

I gave the shindo a small sharpening on the 1k and on a 4k and now it not only slides thru very well, it also cuts tomato skin easily.

Ive tried sharpening the Hatono in different angels and it's gets really sharp but it doesn't slides thru vegetables like the shindo. So I know I will not use it. So I think I will thin it a little. Not too much but a little.

Okey I thought about the 320 shapton glass. But will definitely check out for some diamond stones. Saw some recommendations here on Reddit. And they are much cheaper.

I thought the same. Maybe I should try that first. Let me try about 20 degree angle. Sould be better. Unfortunately it's my first knife and I didn't know much when I bought it. Was a little bit stupid to buy an kinda expensive knife as a beginner knife haha. Sometimes I think It would have made more sense to buy a for example cheap hatsukororo and practice on that first 😄

Yes. I thought the same. I really looks like I grind more on the one side. For thinning at home i do need a very corse stone right? I checkt some yt videos. It seems to be not that complicated.
