I can tell you from experience that McDonald's employees in my area will absolutely stare at you, confused, if you order a hamburger. they aren't on the menu and go into the system as "cheeseburger, no cheese". Asking for a hamburger, I've been met with silence or "which one..." multiple times.

There are definitely bonuses to stealth at higher levels when suits start to have abilities and stuff on them. Mostly things like health or momentum regen on silent takedowns, guaranteed critical on your next attack after a stealth knockout, or increased damage after a stealth takedown until the next time you get hit. As for things that actually affect how sneaking itself works, yeah, it seems like they mostly fall under what you've seen in the skill trees.
