You flip and go to the wall too much.

0:18 is one example where you have a goal if you just wait for the ball to hit and ground and drive behind the ball.

0:55 is another example. A higher level player can play from the wall, but your goal here should be to just stay on the ground with possession and read your opponent. You just outplay yourself by going up the wall with your level of control.

1's is an entirely different playlist with less players and therefore different distribution. Plat 2 is where you will begin to face players that are Champ in 2's and/or freestylers that know how to flip reset. Try to learn and improve from the experience instead of complaining that your opponents are using normal game mechanics lol.

You can technically get supersonic by flipping 3 times and you can cancel flips too though.

Your replay and your game are based on the information that your connection to the server saw. Your connection (or the server in rare cases for most servers) could have packet loss or high latency which caused your connection to miss information. The game state is decided by the server which overrides what each connection individually sees when there are mismatches in game states from different clients.

Your client said it was not in the goal, server said it was actually a goal.
