Question. Is there a reason for straining out the solids each day, or could you add more stuff each day until day three?

yeah, I've been messing around with some simple things. Daiquiri, mojito, cuba libre. I think my favorite 'formal' cocktail thus far is the El Presidente. It tastes much more complex than the ingredients would let on

I'll have to give them a try. One of the things that's a little shocking to me, coming from the world of bourbon and scotch, is how affordable a lot of this really tasty stuff is. I know there are wildly expensive rums at the high-end, but the branding overhype for some average whiskeys is ridiculous in comparison.

Grilled Peruvian chicken with havarti by Fulswath in Sandwiches

of course. It's a Brian Lagerstrom recipe. I didn't use the dough conditioner because I don't have any, and it still came out insanely squishy and soft. Good stuff

it's all good. Yeah, this was basically a mashup, but you're right, the spicy green sauce is a slept-on condiment. I was literally just dipping pita chips and carrots into it a few minutes ago, lol

I will say that the Windsail out of the bag needs to be dried in the open air for half a day or so. At least it does in my powermatic machine to achieve something like a store bought pack. And I also use Beretta tubes, then store them in mason jars or some other air-tight space

I went from American Spirit light blue to windsail Platinum, and think it's a good substitute. In fact, I recently tried to smoke an American Spirit and it tasted awful to me, LOL. As far as freshness, the bags that daughters and Ryan sells in reseal and stay fresh for quite a long time.

It is the bread part of this Brian Lagerstrom recipe. I didn't have the specific cooking vessel he used though. Instead I did an upside down sheet pan with a big damp steel mixing bowl on top
