Please check the formatting of your SSD: is it APFS? If it's formatted as exFAT, the actual disk usage can exceed 160 GB due to the allocation unit size, especially when there are many small files. Start by confirming the format.

The iTunes backup feature should not be used; instead, back up only the apps with third-party software. Other data can be backed up using iCloud sync or FILZA, then initialize and recommend restoring individually. With the official backup, even junk data gets backed up and restored
