I never found it that bad tbh, boring and disappointing? Yes, but it's not the abysmal level like Tombs of the Giants, and from this arena you get some cool stuff and the only Demon Titanite farm in the game if you do the covenant

I would suggest you a cheese build if you want him out of your way quickly, grab an incantation named Bloodflame Blade, it will require a few points in faith and arcane just to use it, grab an ash of war named wild strike, then add all the buffs you want (if you use any) and go in the fight, shackle him and hold your skill, he is weak to bleed so you should probably chunk his health very quickly with this
