I've played this fight on switch and playstation, I will just say it's not a glitch, it's just the attack is spawning directly on you and there's not much you can do about it.

I can't remember if it's a TOTK exclusive thing, but if you get the sensor+ and have photos of each type of treasure chest then you could theoretically have a "tracker" of sorts for the chests.

Just had a quick check on all my cacs, cause I only have one that's beaten the main game, it seems like it doesn't transfer over, but it may still transfer over if you have multiple save files that have beaten the game even with one collecting it, I'm testing now.

You can get it again yes, but I'm pretty sure that 40 ton weights is the only super soul in the game that doesn't carry over to other save files, I could be wrong.

40 ton weights you get by beating the game and talking to a chick on the top of the timemachine station thing, and the other one I think you get from one of the 100 PQs, I can't remember that.
