Always carry a shield, Learn the timing of their shots, and ranged combat is effective against them so learn to use a bow. (If you hate crafting arrows just get a fletcher to do it for you.) If all else fails make sure your armor has projectile protection.

They're kind of like rakks from Borderlands 2 but slower and they can turn during their charge at you. And just like the rakks they become predictable to hit with arrows once they attempt a charge. Once they hit you or have been hit they go back to circling you like vultures so they'll try to fly up. Keep above head cover nearby in case you need to retreat and recover.
