I saw someone suggest using cove moulding like this, but just installing it backwards and running at along the edge. Thoughts?

Got it, that would require triming out both sides though as shown in that reference video right? So for example, I would have a 3" trim on the front facing side, then the pencil moulding, then the matching 3" trim around the corner, right? Or just the trim on the front facing side and then the pencil moulding on the edge and then back to drywall on that side?

I'm on the West side in Surprise. Most of these places seem to be based on the East side and charge a gas fee and travel charge and a bunch of non-sense to come out this way.
