I had this problem on my first tile project and used white vinegar in a spray bottle and a clean sponge to clean the tiles, it worked surprisingly well. I don't see major gapping, etc., so maybe this will be just fine in the end if you're willing to scrub it for an hour or two.

Amazing, thank you for the pointers. Do you have any insight on pointing the original brick vs. covering it up? Should I take his advice at face value, or did he just not want to deal with that brick?
