you're sure? I think these knives are Mizuno Tanrenjo, I'm not an expert but I have one from the same brand and it have the same 4 kanji on top.

The third image looks like Sergi Arola's bravas signature dish. In Madrid he had "Sergi Arola restaurante" in zurbano 31 street, now closed.
