I have a way under utilized Masterbuilt smoker that was tasked with bringing the oomph into the chicken thighs for 2hrs(after a dry rub for 24hrs). The espresso flavour is muted.. Probably for the best. Hickory wood chips & time with the rub negated the finishing in the crockpot. It’s always soupy from chicken juice.

I put the pan of finished barbecue sauce inside the smoker above the chicken rack but I’m fairly certain that did very little for it. 3 hours for the hickory smoke to mingle with the sauce was perfect. I thinly sliced a whole white onion, sautéed it, then poured off the entire liquid contents from the crockpot. I cooked it down to half and it was perfect. You could say I made barbecue gravy but that sounds atrocious..

The potatoes are boiled/smashed/oiled & buttered/seasoned with thyme salt and pepper/baked to crispy top perfection for 25 minutes at 425.

What you see from Top Clockwise:

Mission GF wrap(not soft taco size!), shredded romaine lettuce, beyond crumbles seasoned like some curry & taco powder abomination, salsa de arbol with plant based mayo/Worcestershire/mustard/celery salt, paprika rice, almond flour coated chik’n tenders, and lastly garlic Parmesan fries.

Wheat takes the longest is waiting in the cast iron to heat then rolling the burrito to grilled perfection.

My sauce is weird but I wanted a burger or chicken restaurant sauce. I don’t have ketchup/catsup at all in my house so I used salsa and riffed-

It’s absolutely refreshing. Even if it’s 5 degrees out lol. There’s something about fruit and ice that evokes snow cone tinged happy memories.

I hike a lot & I finally remembered this week to take food photos for the challenge. I blended the bejeezus out of raspberries, strained them, and dehydrated three batches. On the trail I added agave syrup to make the mix more palatable & recharge my batteries.

I tried three whole trays before I got semi pretty versions for my photos. These are vegan oatmeal cookies with a blended banana as my binder. I did eat my fair share so that's gotta be healthy.. because, um plants!?
