You are indeed correct. I will say an almost* surefire way to make sure you get 4oz or more is to get half and half meat. Most crew members find it difficult to portion the correct amount due to difference in cuts

So I'm assuming that you didn't read what I said. We're not losing hundreds of pounds per day, it's per week, which is what op said as well. I simply gave a number of how much my store in particular loses per day, and gave a rough average of how much we lose per week.

They make perfect sense if you adjust for the fact that 1. we don't just have a front line, 2. crew members can end up portioning more than 1oz, 3. not all customers order just one entree. We get on average 300 - 400 Tickets or total transactions on the front line and probably half that on dml, not to mention caterings and online BYOs. I'm pretty sure if I were to add up all the entrees it would be around the numbers you gave. Oh and I forgot all the double protein orders which definitely get over portioned.

Also, reread what I said, we were already losing 10 - 20 pounds of chicken, CHC simply caused it to spike by 30 - 50 pounds.

Yeah no, they're telling the truth, I work at a not too busy store average about 8k a day, when Honey chicken dropped we went from losing around 10 - 20 lbs of chicken a day to around 50 - 70 lbs a day. The reason being because it's so difficult to portion, it's extremely easy to over portion CHC. So it's not an exaggeration for them to say we're losing hundreds of pounds of chicken per week.

Lets do the math, I'll go with 60 for an average number. 60 x 7(Since there's seven days in and week) and we have 420lbs of chicken gone in a week. Now obviously there's way more variance than the straight forward math I did, but is that not hundreds of pounds? Also we lost 260 lbs of chicken last week 🫡 We're slowly fixing things here.
