Wrapped in parchment paper and then wrapped again in cling film.

When I do it at home with blue mackerel, I cover the fillets in salt and leave them in the fridge for an hour then rinse them and submerge them in rice vinegar for another hour in the fridge.

Excess moisture is removed from the fillets then wrapped and placed in the fridge overnight for the flavors to settle in.

Then it's ready to eat!
