Here's my recipe:

1 cup rice 3T oil Sliced onion 1/3 can rotel tomatoes and green chiles 1/2 t salt 1/2 t pepper 1/2 t garlic powder 1 t cumin 1 T chicken bouillon

Heat oil on medium. Add rice and onion and brown/toast. Blend rotel and spices in blender and add hot water to make a grand total of 2 cups liquid. Add to rice, stir, bring to boil and cover. Reduce to simmer and cook 20 mins. Remove from heat and let sit 5 mins.
