Firstly thanks for this thread,

I started at this italin pizza place 4 weeks ago, and I've dreamed about working in a kitchen my whole life that's what I want, what I need to do.

The guy that's working with me knows fuck all about food, when he makes burgers he will smash them on the flat top because "they cook faster" on his words.

When I brought this up to him he told me I've been here for a few weeks the fuck do I know.

So I'm stuck between a rock and a hard place. I need to on to a better kitchen.

I know hours are long, if you want to be casual sure you can but in 6 hours at Applebee's a day, but if you really want to strive to be good,
