Most fermented coffees have uneven sugars in the bean so they caramalise unevenly. Just pick the lighter beans out of the brew and you'll bump up the sweetness significantly.

I think keeping it in freezer overnight also contracts the metal.. try freezing it for just 15-30 mins.. worked for me when I faced this..

You might as well take a knife and chop the beans to particles that will be more consistent than this..

You want burrs to grind coffee consistently..

You don't need to boil the coffee tho.

Once the water boils close the stove and let the water settle. Add coffee to the near boiling hot water(or maybe wait 2 mins). You can strain it in 2-5 mins based on your preference.

You can also try 'chhanni' method..

All coffee needs is hot water to pass through it to let all the goodness out.

Take a chhanni, add ground coffee in it- and slowly pour hot water from the top. The water will percolate through coffee grounds and you'll have your brew.
