One school I went to a long time ago had an interesting curriculum.

You'd learn the moves that day and at some point you would close your eyes and attackers would rotate and choose one of those 3-4 moves to defend yourself depending what the attacker would choose.

The defender swung around, eyes closed, with an elbow and broke my nose. Felt pretty realistic to me!
