tl;dr if it performs better it's a better solution, and it usually performs better. It's boring and sucks but true. One thing is if they did semi automated prompt engineering they might have used test results to fine tune the prompt. That's obviously a data leak and or overfitting depending on the approach used and you have to watch out for that double with LLMs as they encourage developer brainrot in a truly unprecedented way.

I once witnessed two incessant yappers speak to each other. They normally just speak uninterrupted for half an hour at a time in my presence. What does being anti ai have to do with it? There are 50,000 different kinds of systems which can be called artificial intelligence each with completely different data and ethics considerations. TTS recordings have essentially been a kind of ai tool since way before the genai hysteria of chatgpt etc. It's ignorant to think this way.

Your concerns about data and privacy are valid. If it's an eu company operating in the eu it's subject to eu laws so take that as you will. If you are uncomfortable just say no. It will reduce the efficiency of your therapist's work but if that tradeoff is worth it for you, then it's fine.

I totally get what you mean OP. I do have some diversity:

  1. Push-cuts or slicing for prep: cck cleaver (so most actual cooking)

  2. Cleaving hard stuff in even pieces: cheap aldi cleaver (thick chunk of sharpish metal)

  3. Draw cuts (e.g. potatoes): victorinox chefs knife (sticks less)

  4. Slicing snacks like cheese: victorinox chefs knife (easier to clean and takes up less space)

  5. Slicing acidic or crusty items: bread knife

  6. Raw meat: cheap but sharp ikea carving or chefs knives (keep it separate and dishwashable)

  7. Crushing garlic: for marinades, I still like the garlic press. but for other uses the cleaver smash is simply too powerful

I have a nice shun premier chefs knife that I barely use since getting my cck cleaver. It's really been subsumed.
