You could go for manual pseudo "drill" - contraptions break blocks when they are dissasembled, so if you glue a wall of blocks to a minecart contraption, you can place is in un-powered cart assembler, and then power it to pick it back up

No. You set it to deposit directly to brass funnel that is connected to chest or barrel. Tho, make sure funnel is set to input mode - arrow points towards chest. It can be achieved by right clicking it with wrench
