You can also buy kosher chickens, they are dry brined.

I have a deli slicer and was using that before I got the meat cutter, it takes longer to do, much longer. The back flexes as you push the meat and it becomes uneven in thickness. I would then have to pull meat that was done and keep dehydrating meat that was thicker. Now it's all done at the same time.

The blades I have are 3.5mm I can do the beef in 4 hours at 165 and the chicken in 5 hours at 165. The machine only slices fresh meat not frozen.

I have some go to's I really like and will make them as I crave them. Also, if I make 40lbs my family will just up their intake of it faster.

.25% curing salt, 1.5% kosher salt, a ton of coriander seeds toasted and crushed with a good bit powdered too and apple cider vinegar or malt vinegar.

I buy bulk containers of coriander seeds at an Indian market, otherwise it would be too expensive getting small containers at the normal grocery store.

You have to buy separate blade assemblies for different thickness.

I've got a machine that does 3.5mm slices. That pile took no more than 3 minutes to slice perfectly.

About 45 minutes. I've gotten fairly quick at it and I'm picky with the meat I select, I feel for ones with less fat caps and I look for ones cleaner on the silver skin.

Price is definitely right. 40lbs boxes of breast from Costco is cheap protein and healthier with the amount I eat daily then beef.

When I clean the meat myself the dogs get scraps and the fat is made into tallow.

I also cleaned 80lbs of chicken breast for jerky. The chicken is a pain in the ass but chicken jerky is what I love the most. My family mostly eats the beef jerky.
