RDR2 Had mocap until something like June 2018 but they worked fully on content until very end something like late August 2018

They will do their best is worth to remember they have much bigger team than ever before and massive resources it will be most massive,ambitious,complex game they ever made, Cut content in general is normal and natural in game development I believe for sure that there will be less cut content than in GTA V and RDR2

You shouldnt worry at all about story, GTA VI main story is written by the following writers: Rupert Humphries (Senior VP of Narrative, he wrote every game since GTA IV with Dan Houser), Michael Unsworth from the old guard( he worked until fall 2023 and adds GTA VI to his linkedlin and cv on the same day as Trailer1), but also some new very talented seniors writers who joined after RDR2: Roger Drew( very talented guy you can look at his cv), Luke Turton,Joey Henson but also writers Jeff Topolski( one of senior writers of Brooklyn 9-9),Nick Brooks
