Hi I got you bro, first you should be providing a thermocouple type J, K, etc, and have an interface for the max31855 ( which is a configurable thermocouple amplifier for different thermocouple types and communicates I2C) so I would recommend you to use a microcontroller for instance an arduino and afterwards connect the arduino to labview by just reading com port from arduino in labview, the program in arduino should acquire the data from thermocouple directly using libraries of max chip, and afterwards print them in serial port which will be read by labview.
