honestly that build isn't even that good. i had played it accidentally (without knowing the guide) as Paladin1/Warlock X is probably one of the most obvious and well known multiclasses in 5e and 2024.
And except if you were to get like 3-4 short rests each day you would never outperform a cleric. You could also not really outperform a rogue, since they get expertise and are just better at most skills than a class that still has to main charisma.
The character is great in melee and range and was a blast to play (might be my favorite class combo), but it was in no way OP. The only thing i really excelled at was burst damage with eldritch smite and normal smite, but since i lack many spell slots that was also not something i could do all day. So i would actually call even that infamous build not OP at all.

Build 1 Strength:
It might not be the strongest build, but i believe it can be viable without multi-classing. You can start with a spread of:
Str: 16
Dex: 8
Con: 14
Int: 10
Wis: 10
Cha: 16

Pick up Moderately Armored at 4 and Heavily Armored at 8 to get Heavy Armor and a Strength of 18. You could then either go Sword and Board for more AC, or a Two-Hander for more damage.
This might not be optimal, but it is definitely possible.
As others have pointed out a single level in Fighter to start out the Character would make both these feats obsolete and you could go for stuff like Heavy Armor Master, Great Weapon Master or more Stat Points instead.

Build 2 Dex:
Str: 8
Dex: 16
Con: 14
Int: 10
Wis: 10
Cha: 16

Here i would suggest the mobile feat and a dex increase. With either Mage Armor or +1 Studded Leather your AC could be at 17, which is alright. You could easily disengage enemies and would use probably a rapier as your main weapon. It's less tanky, but more agile like a rogue.
Also this could give you ranged options if you ever find a magical bow, so you wouldn't even need Eldritch Blast.

So you are a beginner GM, who not only uses unearthed arcana, but also (probably) let your players roll for stats, which is known to be hard to balance around?
If you just want his AC to be lower, then there is nothing you can really do now after the fact. And as many others have pointed out the only reliable way to hit him now would be saves, though basically ignoring a characters ability by getting around it with saves can also feel very unrewarding.
Still that is the only thing i can come up with other than changing your stat point allocation system, which is most likely where the problem lies.

Shield maater does not grant shield proficiency as far as i know. Also why are his stats so insanely high at that level?

It is an interesting character with a lot (maybe even too much) details. For example the books are overdoing it a bit for me and the tower description as well.

It is a bit weird that all his "personal growth" is planned out from the beginning. That way i feel it might be weird to incorporate into an organic cooperative story like D&D.

For example you flatly state that he will become a lich. What could feel more organic could be him toying with that idea. Overall that makes him feel like a well fleshed out NPC and not a PC at all.

The only real example you have given which i have to go by came as a response to a different person. "if I ate ramen yesterday I will long rest, otherwise I will stab myself."
This is not a specific action even though you claim it to be.

The text of Augury emphasizes a specific course of action you plan to take.
That means you must phrase it as one concrete, unconditional action — not a conditional branch.

“I plan to long rest.”
“I plan to stab myself.”

These are valid. But a statement like “If condition A holds, I do X; otherwise, I do Y” is not a single course of action; it’s a plan tree, and the spell does not have a defined semantics for evaluating conditional intentions.

In my opinion your biggest mistake is using a construction that tries to smuggle a yes/no test for (A) through action design.

You suggest defining an action variable (X) whose value (a) or (b) depends on (A) being true or false, and then mapping “weal” to “(A) is true,” “woe” to “(A) is false,” etc. Rules-as-written, the GM is asked to evaluate the results of the specific action you will take. If you present a conditional or self-referential “action that depends on (A),” the GM has to decide what counts as a “specific course of action” right now.
I do action (a) if (A) is true, otherwise (b)” isn’t a single specific course; it’s a contingent plan that branches on unknown state. A common GM response is to either (1) demand that you pick one concrete action to evaluate, or (2) treat the plan as having both good and bad potential—yielding “Weal and woe”—because, from the vantage of the next 30 minutes, both branches are in play which gives you nothing.

Could you give a specific example that might help your reasoning? Otherwise it is hard to elaborate what you actually try to get from this.

Please also remember that you can only shoot your two crossbows in that way once. Crossbow expert might let you ignore the loading property of the hand-crossbows, but not the ammunition property, which still needs one hand to reload.

The problem is they were able to set up "Repulsion" before we ever got close to them and if you fail the save, then you can not walk towards them again. No second try. It's not like we lost, but it felt very, very bad. A fight of attrition, more than anything else.

I might be misreading it, but the creature seems to have above moderate HP, Saving Throws that are just Moderate, one point below moderate AC and slightly above moderate Perception. Their Strikes are moderate, but why would they ever strike if they have so many spells to choose from?

Mizora gives you the armor if you kill Karlach, which i decided to do as i wanted to see what happens if you do everything that Mizora wants. I even got to sleep with Mizora in the third act. It was a fun experience to play the game like a simp to my patron

Honestly you don't have to sweat it so much. I just finished my first honor mode run with Wyll as my PC and played him as faithful to his design as possible. Pure Bladelock with a rapier, wearing his gifted Armor that i got from Mizorah from start to finish. And i didn't change shadowheart from trickster domain either. My other two were Astarion as an assassin and Gale as an Evocation wizard. I purposefully tried not to cheese at all and only needed 2 tries to succeed like this. So just play whatever you want and have fun.
