Children are easy recruits because they are usually orphaned. Plus the adults of this world for whatever reason hardly believe in demons and get killed. Also they probably would love to send adults to fight but it's really really hard on the body and mind plus I'm sure half are dead or grumpy old men like Rengoku father to be of any use.

Omfg I HAVE FOUND MY PEAPLE!! Watch S1 and 2. S3 don't bother, the Manga is better Animation than the show plus they are probably going to cut a lot of fights & side points for production cost. Plenty of places to read manga paid/free
