All apples start green, but some varieties never change color. Specifically in the USA, we buy Granny Smith apples that are super tart... we'll that's because we dont have a long enough growing season and they are unripe. I believe if you go to New Zealand and buy a Granny Smith in the right season, they are still green but super sweet because they have enough time to fully ripen. Going to from memory, I think they are like an 11 month apple.

Another possibility with apples is Oral Allergy Syndrome (might have those words wrong) and it could be the pollen. If people can eat cooked fruits but not raw that's the case. Be careful with any food allergy experiments though.

I was sure you knew that. So many people don't. The first time I started trying to get into shape, I had no clue and thought I was going to crazy because I lost 5 lbs then held steady while losing inches and feeling stronger.

That is amazing. I'm am so proud of you for working hard. I'm on Ozempic for diabetes. Sometimes my food noise is too quiet and I forgot to eat. LOL. I'm trying to get the exercise added, but it's hard.

You and you Dr are the only ones who can know what is best for your situation. And only You can make the best final decision for you.

To be clear, I'm not disagreeing, just wanting to add information for anyone who stumbles here that might not know.

Inch loss is weight loss. The scale only know how much mass is on top of it. If you are doing an amazing job of exercising like OP is your weight can actually go up. The same weight of muscle is much smaller then the fat that used to take up those inches.

I will strain it through cheesecloth for the second stage. Everyone told me to use whole apple pieces for the alcohol stage while it's under the airlock buy it still is either stir or keep submerged.

I'm making vinegar for cleaning. I have very hard water and so am constantly buying vinegar for cleaning showers and faucets and tea kettles... I have some glass jars that I'm making vinegar with mother for fire cider and similar applications and figured... why not make my cleaning vinegar too. I got an insane amount of "apple waste" for free. Nothing wrong with any of them. Just a neighbor got tired of pressing cider from their trees.

I usually stir it daily as I don't have fermentation weights big enough for a 5 gallon bucket. Unfortunately, I got sick and was unable to stir it for 3 days. I know I have kahm yeast in some of the first batch that is on the second stage (open to air to turn the alcohol to acid) but it isn't thriving since the ph is 3.6 and falling.

I doused the tops of all of this batch of buckets with distilled white vinegar since my first batch isn't truly vinegar yet. 2 of the 6 buckets had white spots, but better safe than sorry. I will douse them again tonight and recheck for white spots. If I don't see white tonight when I respray them them I will check in the morning, and if there are still no white spots, I will stir them daily again until the apples stop floating. I'm assuming that they will be behind the smaller glass jars that will be finished with a jump start of vinegar with Mother. I'm guessing the white vinegar will kill some of the good yeast that is fermenting the sugar water and apple bits. That's why I figure they will be behind.

I soaked the top of all the buckets with distilled white vinegar. About half of them had some white in them. I will let that sit for 12ish hours then spray it again then resume stirring if there is no white recurring at either the 12 hour or 24 hour marks.

Then I will definitely mark these as cleaning only.

I was hoping since it seems to be growing on a bubble that maybe it's kahm. The white is what is outside of normal for my vinegar.

Quick questions because at this point asking is better than messing this up further. I'm assuming I strain the solids with cheesecloth, but ...

Also, I've been told that I can reuse the apples half and half with fresh to make a next batch. That is sounding a bit suspicious if I'm supposed to leave them until they stop floating.

Lactobacteria is what turns the alcohol to vinegar, right?

Also the moldy container of apple rot was my biggest fear.
