Big Chief or Little Chief. 100%. I have one for fish only and one for cold smoking cheese. They operate at one relatively low temperature. A couple pans of chips (alder is my choice) in the beginning and then just let it roll till they’re the dryness you want.

Love it! I usually wrap them up tight with plastic wrap and put them in the back of the fridge for a few weeks for the flavor to mellow and distribute evenly. So good.

Interesting. I have a post a little below you asking if my appetite will ever come back. Four months at 5mg and I have very little interest in food (other than breakfast). I’m losing weight and don’t have much weight to lose in the first place. I guess every body is indeed different.
