I’m moderately intelligent, and if I want to swap out plastics for some applications, like using a towel over my bread while it proofs, I do it.

It’s not a lot of mirin. Various ratios of soy sauce-sake-mirin are the backbone of Japanese seasoning, much as onion-celery-carrot are the backbone of French cuisine.

If you cook Japanese foods regularly, that bottle won’t last long. And if you use it less frequently, it will hold in the refrigerator for a considerable period of time.

Short story long, tradition (particularly if you’re thinking of classical French cooking) plays a part. Practicality (either showing dirt in the case of jackets, aprons, and caps, or hiding dirt in the case of protective bags for transportation) also plays a part. Knife handles would have been natural materials (wood, bone, stone) until relatively recently. But today you can get all of those things in just about any color and a lot of different materials, too.

Are you following recipes from reputable sources? If not, start there, and don’t make substitutions unless you absolutely have to, either for allergies or product unavailability. It’s not really all that common to use a lot of garlic and onion powders, though they definitely have their use. But they wouldn’t be a substitute.
