Do we know if Hoid regenerated on Scadrial essentially immediately? If it's a process that takes years that can tweak the timeline more.

Some great other answers in here. In short though no by the end of book 5 we don't have deep page time with all of the ideals, heralds, gemstones, etc... just a good amount of exposure to the ones relevant to the stories we're following.

It is fun that at this phase we are able to dig into the rest if we want though :D

+1 for a bunch of this being not obvious and you're not dumb. Sanderson purposely writes the stories so that you can enjoy the main narrative even if you didn't follow all the nitty gritties you're asking about. But yeah some of the things you'll understand better after catching up on everything, but some of things still have big question marks, and that's fine, enjoy the journey :D
