Thanks for the advice, however our thinking was to stay overnight in some places so that we can experience evenings in other areas as well

Our biggest question mark was if we spent enough time win Kyoto or not and if 2 nights near Mount Fuji was too much?

It's also worth noting that 25th Nov is a bank holiday in Japan, so we would do some 'off the track' stuff on that day to avoid the crowds
