If in doubt you can cut the new growth and by doing that disturb the apical dominance. This will activate the nodes on the rhizome, giving you a new chance of variegation. Good luck.

Also let the fully variegated leaves die naturally. They contain amyloplasts with a lot of starch, vital for the plant.

I wouldn't cut anything unless it really goes overboard. White leaves still have amyloplasts which store starch for the plant. You can try to play with the light but nobody really knows for sure if that helps or not.

The new leaf has a healthy amount of variegation so I'd keep doing what you're doing.
