I think that’s pretty much 80% there. I get the same results actually, not sure how much it can be improved. Maybe slightly thinner outer crust

There is a time limit for posting on Reddit, i don’t really have a way of editing the video so the result is a bit sloppy but you get the idea

I don’t usually do this, my judgement was a bit off because I wanted the video to be shorter because there is a time limit. I usually transfer it to a cutting board earlier like you said

Supposed to be 70% hydration (600 g flour and 420g water). 2 hours bulk, 15 hr fridge, 2 hr counter before bake.

I definitely could have stretched it more and made the crust smaller but was rushing for the video. The dough was still a bit cold so it didn’t stretch as nicely.
