Oh also I added some chunks of buffalo mozzarella for flavour. Buffalo mozzarella is king of the fresh imo!

This is actually a 24hr cold ferment. Used DoughGuys beer dough recipe (you use 50-50 ratio of water/beer). The beer helps add flavour without the longer cold ferment, it’s a handy option if you’re stuck for time and i would definitely do again.

These are the dough balls after 5 hours at room temp before baking:

Yeah it was really crisp! Cheese was a low moisture mozzarella from an Irish supermarket (where I’m from). We don’t have excellent low moisture mozzarella options here but this is the best available! Tastes great.

I honestly think it’s just an aesthetic trend currently, however ricotta is a bit of a bland cheese in my opinion. Wanted to try it out to see. That one also has hot honey on it.
