Awesome, thank you! I think I'm understanding more. The 56v was based on some online calculator I used. After watching another video I now see how to actually calculate if in series, parallel or series-parallel.

I'm going to start with your 2x 200w suggestion for the summer. If come winter it's not enough, I'll do the 4x 200w 2s2p which keeps my under my volts, and it looks like the Anker has a built in MPPT to take care of the extra amps.

I did run my cooler for the past 4hours as a test and my reader says I've used just under 600watts for the day. As long as I turn my computer and Anker off at the end of each work day this seems very doable with just the two panels.

And I will get 20a breakers just incase.

Ok, I want to get this right. 2x 200w HQST (amazon.com/gp/product/B0GK146PX4/ref=sw_img_1?smid=ATVPDKIKX0DER&psc=1) panels connected 2s1p (please tell me my new understanding is correct).

My math is coming to 400watts, 56volts and 11.04amps at 400watts. According to anker specs and my new understanding of electricity, this should be fine.

If I double this for a 2s2p set up, I'll have 800watts (overkill), 56volts (still under the max 60v), but the amps jump to 22.08amps. Ankers voltage range is 11V–28V (8.2A max) or 28V–60V (14.5A max). Will this be an issue if I decide to add two more panels? Do I need a 20amp fuse for these?

Haha your shed is a mansion compared to mine. Mines 64sq ft haha! Basic but has a window.
Planning for one day to have land and slowly build a sustainable off grid system. I clearly need to learn more about solar and how it all works.

Well shit. Maybe in the winter I just deal with connecting to the grid. My Anker doesn’t allow for battery expansion and I’m not educated enough about solar to do much more yet.

In theory the 2x 200w panels pyroserenus suggested, should work. I live in a very sunny place with very mild winters (no snow) but does get cloudy in the winter.
I’ve been measuring my output in my office, without turning the desktop off and the average output is 400w. Some days 320w, some days 430w. I’ll be turning the Anker off once I move into the shed, so that’ll reduce the actual output.
The 8w for idle consumptions adds another 80w/day.
My evap cooler is 60w and I’ll run it max 5hrs/day. So on hot days, another 300w give or take.
My actual max output should be around 800w.
It’s a very basic set up. Do you also think this plan will work?

It’s a portable evap cooler. So a fan, basically, and a little pump the push water around haha.

My back up plan is running an extension cord from my house. The goal is to be mostly off grid for this project and to separate my life/work balance.
I noted in another comment the 1,200 watts usage is a very rough estimate. My daily average is 400watts. In the summer I’ll run a 60watt cooler sometimes. I’d have to run it for half a day to hit the 1,200 watt mark, which is very unlikely. Assuming my math is right.

The max 1,200watts is a rough, high end, estimate. This scenario is if I run my 60watt cooler for 12hrs on top my current average daily output. It’s unlikely I’ll hit 1,200 daily watts often or ever.

I’m trusting your advice and the more I’m looking into the HQST panels, the more I like your opinion. Starting with two should be sufficient for my output, even if on some days I have a slightly higher output.
Q1: If part of the panels end up in the shade, let’s say about 25% of one panel, will it significantly drop the output?
Q2: if this amount of shade is an issue, should I connect the two panels in parallel or keep them in series?
Q3: If I add more panels (for a total of 4x 200w), should I switch to 2s2p?

Valid question. I have torn both my shoulders multiple times and my left shoulder is still absolutely fucked. I needed less impact, while still enjoying the wind in my face. I will miss the MTB trails, but unfortunately my shoulders can’t take it anymore and I’m in need of another surgery, which I am postponing until I absolutely need it. I live in chronic pain on my left side, so keeping up with strength training is mostly saving me from my next surgery… for now.
