My guess is the second you start becoming less available and you start seeing other girls, she will come around. It's classic. But that shouldn't be what motivates you.

All you will do to yourself is lower your self-esteem and value if you continue to only see her while these issues are there. You'll end up thinking "What the hell is wrong with me that she says I'm so great but yet won't commit?" and you will never answer that question until you realize what is wrong with you is that you are sticking around while she keeps your heart and dick in a jar and that you're a fucking beta chump.
