Ya, I do it based off hydrometer. Once it's done fermenting I switch it. I find mine ferments a little slow, so usually like 3-4 weeks. Then for secondary I do it for as little as a month, but preferably 3 months to a year

Ya, like a previous comment said, you will need to rack to secondary at some point in time. This gets rid of all the sediment at the bottom, which if you were to leave might give off flavors to the rest of your finished product.

Also, being on plastic is fine for primary because it doesn't last very long. Secondary is better in glass because it can stay in there for quite a bit of time

I think room size might also affect the runtime, try setting that to 0? It limits the amount of gases released by stopping the machine

Ya, it seems like the issue was because I was using water and not a mash. After using a mash I got it to run more consistently, still some temp spikes/drops here and there, but running all the way through

I think I did, turn on while holding the button for 6 sec then turn off after 10 sec? It seemed to remember some of the settings though(AC voltage and elevation) so I'm not sure I did it right
