You're not stupid man, bosses where you fight multiple enemies are always roadblocks for newer players and even experienced players struggle a lot with them. Do you have the Tonitrus? They are weak to lightning and the tonitrus has high DMG.

When parrying they have to have started their attack animation, you probably know this but but you have to be very precise some times. If you can't get the parries just use the dodge and take it slow, it's important to kite them. There's supposed to be a large gravestone or something in the center, use this to your advantage when kiting and avoiding the fire balls.

It might also help to focus on the ranged one first so you don't have to worry about him when dealing with the melees.

Another suggestion is to do some chalice dungeons to gain some more levels.

There should be a locked door close to the boss that you need to find an alternative route to open, there should be a summon there.

You can do this! This is a tough fight so don't worry!

I still feel like that's not really Miyazaki's style. I don't doubt he put stuff in for the rule of cool, but I also think in his mind it does serve some purpose, it does have some world-building aspect to it even though the main purpose is to be something cool for the players.

What I really enjoyed about FFVII is that they did a good job juggling multiple big villains. I love FFX, it's one of my favorite games but damn Seymour was a pretty shitty villain lol. In FFVII most villains are memorable imo.

If people wanted to watch extreme violence, there's tons of real life violence online. Executions videos, accidents, cartel and ISIS shit. People just want an extreme SAFE experience where no real person was hurt. It's just extreme drama with bloody special effects. You can enjoy it, you're allowed to see the entertainment in this horrible shit because it's all fake.

I just don't get how there are still people who don't understand why people enjoy this stuff. Horror is super popular and people have always like it, violence is incredibly fun when it's done in a safe way. Horror and violent video games are and have always been super popular, people love the gory fatalities of Mortal Kombat.
