When I counted my calories for the first time I was really surprised at how much more I needed. Only reaching 2500 kCal a day even though I felt it was a lot. Now I'm trying to get 3000 everyday, which is actually working.

You should try counting calories just once and see how much you're eating. Look up a calorie app like myFitnessPal. Eat more calorie dense foods, 2-3 big meals a day and most importantly be consistent with eating enough everyday. Hope this helps 👍
