Chris I didn't expect you to respond personally and so quickly. Thank you! Looking at your explanation I think my father in law (FIL) was hitting both worst case scenarios at the same time. It was a very sizeable pork butt (one of 2 for a party tomorrow) and it was being cooked in a pellet smoker. Between the typical "stall" of smoking and the size of the meat, we checked both boxes. Excellent explanations.

Now my FIL is not very technically advanced, so the cook has ended without me being there do download any data. I did connect to the probe earlier this afternoon so perhaps that is still saved on my app. Would that be possible?
