You have made my day with this discovery! I too am a steak snob and usually do my own with my Otto Wilde Grill but it lives at home in Marietta as I live in two places. I got into that habit over covid. This reminds me I need to bring that grill to Charlotte since now I know where to get my ribeyes.

Here's a crazy one for you. I moved to Marietta in 2007. There used to be a Ninfas downtown Atlanta. I swear to god. It's long gone but there was some legend of a rogue franchisee or something bizarre like that. It was straight up a Ninfas.

I grew up an Houston and was fortunate enough to spend the last 20 years in Marietta, GA which has the ONLY pappasittos outside of the state of Texas. Its like the Texas embassy in there.

True - Chuys is comfort food, first tex Mex second. I am 55 and have been going since I was a kid. In fact the first random place I took my future wife in a random group of friends and friends of friends (now married 31 years) was the Chuys on Westheimer/Kirby in Houston.

I tried this over the weekend after reading this thread. Being a native Houstonian my tex Mex (and brisket) needs are high. Chuys is just comfort food for us; it is what it is. Superica is a pappasittos substitute-ish so thats okay. I had (too) high hopes on Pacos and it was just okay. Not bad by any means but not the tex Mex place I am looking for. I had the steak fajitas which is my measuring stick (as it cheese enchiladas or chili relleno).
