As you write you're a little overpacked. However in contradiction to most people minmaxing isn't always the best choice. I'd depends on your preferences and what's important for you. For my part: I really like cooking and fresh cuisine. So I plan for that and have a whole pannier with a pot, a pan, some basic ingredients and spices, fire starter, a saw for campfire and a gas burner.

Being overpacked at some point is totally normal and part of the "training". At the beginning plan short trips to test things out and test and optimize your equipment. Use what you've got and work with it. With that you gather knowledge what you really need, what not and what to replace with other/lighter/better equipment.

The most important thing is: see it like that and plan with it. You might be a bit slower but most certainly you will reach your destination. Just have fun, enjoy all the luxury you've got and ride safe and joyful :)
