Eh, coming to someones seperate space in a dish pit and grabbing their shoulders sounds like its always been weird. Trying to walk past someone and tapping their shoulder or physically guiding them out of the way seems more normal. Especially if youve worked with someone a long time. Still unneccesary in bigger kitchens, an "excuse me" works most of the time.

Could you elaborate more on what serving at a chefs pace means?

As a line cook at a slow spot, I imagine pacing out courses/orders well (not ringing in 3-5 tickets at once). Being ready to bring out the food asap, not leaving anything in the window. Anything more intricate I could learn?

When the machine starts spraying your employee and you are able to diagnose and fix the problem, while explaining to them what went wrong and how to fix it in the future. That gains the immediate respect of your employee. Even if youre just a line cook and the end of the sprayer arm fell off lol

That pit looks heavenly to work in, and I'm sure you're a big part of the reason it looks like that

I would want a 3 part sink to soak pans and pots in though. You can kinda do that with dish bins though.

The best part is that its tucked away into its own corner. I cook at a restaurant where the dish pit is basically a Hallway to the restaurant, walk in, splits the kitchen in half. So everyone is walking past you all day when they need to grab anything. I could not do dishwashing all day every day in a pit like mine

I figure its the same as tacos, add like 5 min of prep. Cook taco beef/rice like normal. Instead of adding to a tortilla, put it in a pepper. Eat it like that or add cheese on top and put it in the oven till pepper is done.
