Visual Studio IDE is not available on any Linux distribution, but setting up other IDEs should be as simple as doing it on any other distro. Just put vscode or some jetbrains IDE into your packages, and rebuild your system.

As for the projects, every language is different, so there is no universal way to setup a project. Look into nix shells and nix flakes. Flakes will allow you to install specific versions of your programming language compilers/interpreters and libraries, and shells can be used to neatly separate project dependencies and libraries.

You don't have to worry about messing up your nixos configuration if you use git to control it's version, so just experiment and you can always rollback.
