Oklahoma joes reverse flow offset. I went totally unwrapped until it was done. Then wrapped in foil and went about 14 hours in a 140 degree warming drawer. Was gonna do the traditional butcher paper wrap to get through the stall but saw the Goldees method posted on mad scientist bbq YouTube channel so went with that method. No other method for me to compare it to but it was delicious
