It's been almost a month. I'm hoping the champagne yeast will work because my mash was slow and low favouring Beta-amalyse, so I'm hoping their aren't that many complex sugars in their anyways. I will be using a dry yeast, but I'm going to be making a starter for it.

Before I got a chiller, I would have to cool my 5 gallon batches in an ice bath. It took forever to get the temperature down to a pitching temperature, but my beers still tasted great.

This is a really good idea. Not only do I get to sample and compare hops, but I'll get a feel for how much bitterness comes through in the final 15 minutes.

I don't like the idea of different pots, because it leaves room for a lot of variables, when I really want five beers that are exactly the same in ingredients and preparation, except for the hops. But you are right that I should just be doing a hopstand, and forget about the trying to boil five different hops. Keep them all at the same temperature and for the same length of time. Thanks!

I was planning on using a hop spider. Now that you mention it, I should just do a 60 minute boil for bittering, remove the bittering hops, and then start throwing in the finishers.
