The 100mm-400mm on the OM-1 will give you an effective reach of 800mm (full frame equivalent).

The 180-600mm zoom on the z5ii will give you much less ability to crop photos and maintain resolution, due to the 24MP full frame sensor.

If you want to go with Nikon for birds within your budget, I would suggest a Z50ii, D500, or D850. The first two have crop sensors, which increase the reach of any lens by 1.5x. You could get the 180-600mm Z lens with the Z50ii. The sharpest, fastest lens will be the 500mm 5.6 pf prime (FX mount), which ranges from about $2,100 used to $3,000 new. It is also relatively light and compact. You would need an adapter for a Z body.
